Summer Pasta Salad with Blackball Salami

 

  • 250g pene pasta
  • 200g (approx) Blackball Salami slices, halved
  • ½ cup olives
  • ½ cup feta cheese, crumbled
  • 1 punnet cherry tomatoes, halved
  • 1 green capsicum, chopped
  • ½ red onion, chopped
  • A handful of basil leaves, torn

Dressing:

  • 1/3 cup olive oil
  • 3 T red wine vinegar
  • 1 t dried oregano
  •  Pinch of sugar

 

Cook the pasta in boiling salted water until al dente and allow to cool. Gently combine all remaining ingredients together and stir through the pasta. Make up the dressing by combining all ingredients well, pour over the salad and serve.

 

 

Creamy Pasta with Peas and Blackball Salami

  • 500g Spiral Pasta
  • 2 Tblsp butter
  • 1 cup cream
  • 1 cup grated cheese
  • 1 Tblsp nutmeg
  • 1 1/2 cups peas
  • Blackball Salami of your choice, cut into bite sized pieces

 

Cook pasta in boiling water with a pinch of salt until al dente.  Place butter and cream in a saucepan and heat until butter is melted. Add cheese, nutmeg and peas and stir to simmer. Pour the sauce over the pasta and add the Salami, for a delicious meal the whole family will enjoy. Serves 4.

 

 

Garlic Salami Pizza with Feta and Mint

  • 1 thin Pizza base
  • 2 T Tomato Paste or pizza sauce
  • ¼ white onion, sliced 50g (approx)
  • Sliced Garlic Blackball Salami
  • 1 red capsicum, diced
  • ⅓ cup mozzarella cheese, grated
  • ⅓ cup feta cheese
  • A handful of mint leaves

 

Pre-heat oven to 220° fan bake. Spread the tomato paste over the pizza base with the back of a spoon, sprinkle with mozzarella and top with sliced onion and salami. Scatter over the capsicum and then crumble over the feta, and then bake in the oven for 8 minutes. Remove from the oven and add the mint, then return to bake for another 4- 5 minutes or until crispy.

 

 

Italian Salami Pizza with Cherry Tomatoes and Basil

  • 1 thin pizza base  
  • 2 T Tomato paste or pizza sauce
  • 3T fresh or 1T dried Oregano
  • 6 cherry tomatoes (approx), halved
  • ¼ red onion, sliced
  • 50g (approx) Sliced Venison Blackball Salami
  • 1/3 cup grated mozzarella cheese
  • 2 T Olive Oil
  • 100g (approx) mozzarella cheese, torn into chunks
  • A handful of basil leaves, roughly torn

Pre-heat oven to 220° fan bake. Spread the tomato paste over the pizza base with the back of a spoon and sprinkle with oregano. Top with onion, salami, tomatoes, salt and pepper and grated mozzarella, drizzle with olive oil and bake in the oven for 8-10 minutes. Immediately scatter over the remaining mozzarella and top with basil.
